The Trove Shines Bright in Bishop Arts

The Trove opened in February 2021, at the tail end of a global pandemic and right after the worst winter storms Dallas has seen in decades. And yet, it’s only mid summer and this bar-meets-restaurant-meets-boutique has quickly become the crown jewel of Bishop Arts. The creative co-owners are Houston born-and-bred T.J. Gonzales, of Mexican, Spanish and European descent, who has over 15 years of retail experience; and Jaime Uribe, who has worked in the restaurant industry since he was just 18-years-old in Guanajuato, Mexico. The pair first opened Ely Artisans Jewelry three years ago, traveling throughout Mexico in search of artists with unique style and technique in silver making to carry at the store. “Soon, we noticed that people would come from the bar next door to shop, and we realized that people love to drink and buy jewelry, and we thought it would be fun to combine the two concepts,” says Gonzales. “That’s why The Trove has the Jewelry Bar, all of the tapas are Mexican inspired, and all the drinks are named either after gemstones, or celebrities who loved jewelry—like Elizabeth Taylor,” adds Uribe. All of the 20 signature cocktails on the menu are agave-based, utilizing spirits like tequilas, mezcal, and Sotol, and each one is a classic with a Trove twist. For instance, the most popular, The Crown Jewel (named for the King and Queen, the ultimate jewelry collectors), is a twist on the classic New York Sour. A Mexican-inspired touch is added with El Tosoro tequila, fresh lime juice, a house-made Serrano infusion and agave. Shaken and served over a big rock, they then finish it with a red wine cap that invokes the blood of the royals. Now that’s a rare gem.

The Crown Jewel

1.5 oz El Tesoro Tequila Blanco

6 dashes Serrano Dissent

1 oz lime juice

.5oz agave syrup

.5oz red wine Float

*Mix El Tesoro, Serrano Dissent, agave syrup, lime juice over ice and gently stir. Strain into rocks glass over a large cube. Top with 100% pure, organic agave andred wine cap.

Amethyst Crystal

1.5 oz El Tesoro Tequila Blanco

.5 oz cassis liquor

1oz lemon juice

.5oz Agave syrup

2oz Ginger Beer Float

*Combine El Tesoro tequila, cassis liquor, lemon juice over ice and shake. Strain into rocks glass over large cube. Top with 100% pure, organic tequila and Ginger Beer.
