Summoning with signature dishes and wow-worthy decor, Catch Hospitality Group unveils culinary concept, CATCH. We caught up with Tilman Fertitta who alongside fellow partners Mark Birnbaum and Eugene Remm guarantee the space to be a splash.
As a native Texan, how does it resonate that the team is launching Dallas as the sixth CATCH market?
Dallas is an iconic city and a natural fit for our next Catch opening. This city’s vibrant energy and booming culinary scene align perfectly with the Catch brand, and I’m eager to see the Dallas community embrace this unique dining experience.
How did you decide upon Maple Terrace for your premiere location?
Maple Terrace is an iconic Dallas landmark with a rich history and an unparalleled character that perfectly aligns with CATCH’s signature brand experience. The neighborhood encapsulates an era when Dallas was transitioning into a more cosmopolitan city; today, it still carries the charm and sophistication of that period.
Can you elaborate on the overall vibe and atmosphere of the space?
The design brings together sleek, lacquered finishes and deep, plush banquette seating to create a sophisticated–and at the same time, inviting–space. Defining elements like our iconic CATCH tree will anchor the atmosphere, making it familiar and new to our guests.
The famous CATCH Roll is composed of crab, salmon, and miso-honey, and the Hellfire Roll with spicy tuna two-ways, pear, and balsamic.
Tell us about the restaurant’s signature experience.
Dallas guests can expect to see all the classics on the menu–from the signature CATCH Roll and Crispy Shrimp to the Truffle Butter Filet. CATCH Dallas will uphold the brand’s commitment to exceptional quality, flying in fresh fish daily from Tokyo’s Toyosu Market and sourcing top-grade Wagyu from regions across Japan. We’re also excited to incorporate some local flare too—with dishes like our Roasted Poblano Margarita.
Tell us about the overall process of how each of your chosen locations for CATCH embodies each market it enters.
When we expand, we look for spaces that speak to us and represent the brand—locations with character, multiple levels for dynamic dining options, and indoor-outdoor flexibility. Our ideal spaces are centrally located and active throughout the week. This consistency across our venues fulfills our brand promise: delivering a unique, high-energy experience in each market while adapting to the local vibe.
Can you speak to the overall process of sourcing high-quality seafood products?
We ensure the highest quality by having fish flown in daily from Japan as part of our ‘Japan to Dallas’ sushi program. We also collaborate with top seafood distributors in Texas, ensuring access to some of the finest products available nationwide.
