Julian Rodarte is the “and son” of Trinity Groves hotspot Beto & Son, which Beto—who started famous restaurant chain Cozymel’s almost 30 years ago with Phil Romano—opened with his son when the younger chef was only 23-years-old. The Tex-Mex restaurant has been dubbed “next generation” thanks to its millennial friendly, Instagram-ready presentation. The flavors, though, come from a heartfelt place. The menu tells the story of patriarch Beto’s childhood, growing up in Durango, Mexico living a farm-to-table lifestyle before it was a popular American trend. “A lot of the food we do at Beto & Son comes from that time in my father’s life, when his grandmother would get a chicken from the yard, and pick vegetable from the garden,” says Julian. “We wanted to create familiar Tex-Mex foods, flavors you know, but serve them in a show stopping way.” For instance, trendy “noodle bowls” are steeped in history. Inspired by Beto’s childhood “fideo,” the roasted noodles are cooked in a broth and served with carnitas, shrimp, and more; just like mama used to make. “Noodle bowls go hand-in-hand with millennial trends, but are actually authentic to the way my dad grew up.” The cocktail menu is no exception, with Julian’s expert hand creating classic drinks with an updated twist that you will surely want to share on social media. For some of his favorites, Julian has chosen El Tesoro Tequila, whose award-winning liquid highlights the ingredients in each cocktail, and compliments each dish.

*We wanted to create an homage to the frozen margarita, which was invented in Dallas. The liquid nitrogen freezes the alcohol itself, creating a sorbet-like texture with no water to dilute your drink.
Agave Old Fashioned
2.5oz. Beto & Son’s El Tesoro Reposado™ Tequila
1 Bar Spoon Organic Amber Agave Nectar
3 Dashes of Angostura Bitters
1 Dash of Orange Bitters
1 Orange Peel
*Mix all ingredients over ice and gently stir. Strain into rocks glass over a large cube and spritz orange essences from peel as garnish. A 100% pure, organic agave cocktail.
Paloma
2oz. El Tesoro™ Blanco Tequila
.5oz. Aperol
.5oz. Lime Juice
5oz. Grapefruit Soda
Garnish with Tajin Rim and Lime Wheel
*Combine Tequila, Aperol and Lime Juice in tall glass over ice. Top with grapefruit soda and gently stir. Julian’s version of a Mexican Aperol Spritz.
