Calling all cheese lovers! The tailor-made trip is led by Laura Werlin — an educator, speaker, and author, and possesses industry knowledge and unmatched relationships at the world’s most storied cheese producers. Travelers will visit creameries and farms, tasting rare cheeses and enjoying direct access to their makers, with Werlin guiding them through every flavor and nuance along the way. Locations range from domestic producers in spots like Wisconsin, CA, and NY to those in the Alps, European countryside, and beyond.
These aged goudas are magnificent (and award-winning) and worth the trip to this north-central part of Wisconsin alone, but the tours of the dairy and cheesemaking operation seal the deal.
You won’t find any cows here, but you will find miles of aisles of cheese wheels as they make their way toward perfection (with the help of skilled cheesemakers and aging specialists). You’ll also see cheesemaking. Most importantly, you’ll be in the heart of Wisconsin cheese country. Monroe is the unofficial birthplace of cheese in the Dairy State (or at least one of the main ones), and it remains cheese-focused to this day.
In the heart of Sonoma County and in a sub-region where some of the finest wines in the world are made, it makes sense a creamery is nearby. In this case, the owner makes a variety of cheeses and offers a tour of the cheesemaking facility and aging rooms.
If there’s time for just one cheesemaker visit in California, Pennyroyal Farm would be the place to go. Located in the heart of the Anderson Valley east of Mendocino, the sheep and goat cheeses, along with the wines (bonus!), made on this property are well worth the excursion.
East CoastThis operation is responsible for making an American Cheese Society Best in Show cheese not once but twice. Winning is a feat achieved only by a handful of cheesemakers- thecrème de la crème. Pun very much intended. Best of all, this beautiful farm is the site of the foundation Farms for City Kids, which brings the city kids in their name to the farm for a few weeks every summer to experience farm life, including cheesemaking, firsthand. Well worth a visit on every sensory level.
Nothing like driving around the Finger Lakes, stopping at the myriad wineries, and ending up on a hill where the goats roam and the cheese vats hum. They offer tastings, bottle feedings, and even goat yoga (goat what?) during the season.
Cricket Creek Farm is one of the oldest, grass-based dairy farms in the region raising dairy cows for milk plus grass-fed beef, whey-fed pork, and laying hens. The farm store sells raw milk and artisanal cheese from their farmstead creamery and baked goods made from a scratch bakery on site. Their mission is to exemplify a sustainable model for small-farm viability by producing nourishing food that honors animals, respects the land, and feeds the community.
SouthInspired by the savory cheeses of Italy and France, Owner and Cheesemaker Victor Chiarizia excavated Blue Ridge Mountain Creamery’s cheese cave on his land in magical Fairview, North Carolina. Blue Ridge Mountain Creamery’s wheels are carefully crafted and aged to perfection in the natural, rock-wall cave or the Blue Room. The result is a complexity of flavor sure to delight the novice and connoisseur.
Chris Davenport is one of the world’s most accomplished big mountains skiers — a two-time World Extreme Skiing Champion and a true pioneer in ski mountaineering. The trip, personally led and curated by Davenport, is aimed at skiers who wish to find the best, deepest powder turns across the world.
