Jaime Uribe and his husband TJ Gonzalez just celebrated their first anniversary for The Trove, the jewel box of a mescaleria they opened in Bishop Arts as an offshoot of Ely Artisan Jewelry. A literal “jewelry bar,” it takes its inspiration from the beautiful handmade jewelry the pair source from all over Mexico, Hollywood’s most glittering stars, the bar’s famous themed nights, and their travels around the world. “Take my newest cocktail, the Versace,” says Uribe, who has created over 22 libations for the colorful menu. “It was inspired equally by the designer himself, the history of Miami, the rich hues of the city, and the Prickly Pears we used to eat from my grandfather’s backyard in Mexico.” The duo also pick up beautiful glassware evocative of the jewelry they sell from all over the world—the Versace cocktail is a lush blush color, and is served in a beautiful Versace glass.

If you’ve been to The Trove, then you know one of its biggest draws are the themed nights, where Uribe and his team go all in. Besides the obvious Miami Nights, where Cuban music and pink and blue neon lights are the backdrop to plenty of dancing, their most popular events are the Drag Night or Drag Brunch, where anything can happen—recently a Drag Queen revealed the gender at a baby shower! Uribe, who has been working in the food and beverage industry since he was 16-years-old at his grandmother’s restaurant in Guanajuato, Mexico, largely thanks his rich culture for the flavors incorporated into the menu. “My grandmother was known all over as the “mole lady” and we serve her mole recipe on our menu,” he says. A classic, sitting amongst the bright, beautiful cocktail creations. Almost like a crown jewel.
