New to the Bourbon & Banter menu this summer is The Forbidden—a large-format cocktail infused and presented in a Porthole. Originally designed for Grant Achatz’ cocktail bar, The Aviary, in Chicago, the contraption suspends ingredients as they’re infusing for a drink that’s as pleasing to the eye as the palate. At The Statler’s underground bar, you and a guest or two can enjoy a tropical, botanical mix of Hibiki Harmony, Cocchi Rosa, chamomile, lychee, ginger, dehydrated lime, hibiscus and pineapple dipped in Campari.
